    Ayurveda recommends that one should eat pulses regularly, as they are rich in protein and very nutritious. Supply of vegetable protein is especially important if one is following a vegetarian diet. Yellow mung beans are the most highly regarded by Ayurveda, as they are easier to digest than other pulses and therefore have less of a tendency to produce an imbalance in Vata dosha. Mung beans are traditionally prepared in the form of a semi-liquid, well-spiced gruel: the typical Indian/Ayurvedic ‘dal’. For this the mung beans should be cooked long enough for them to start to disintegrate.
